Burnt is a flavour.
I am by no means the first person to say this, but as I continue to better understand my “style” of cooking I am realizing how important charing/burning is for adding additional flavour to food. I am not talking about burning things to dust, but more so using flame and heat as an ingredient. Whether it’s the flames or smoke from a campfire, or a propane torch used in the kitchen, burning your food slightly imparts a deep flavor profile that can totally change a dish. I also find paring charred food with ‘high note’ flavours such as citrus or fresh berries balances out a dish and makes it so interesting and craveable. Which is what I am all about here at the East Coast Kitchen.
